Ingredients
For the Batter
- 1 cup urad dal
- 4 cups idli rava
- 1 handful thin poha
- Salt to taste
For the Masala
- 1 tomato, finely chopped
- 4 small onions, finely chopped
- 2 tablespoons fresh coconut
- 4 green chillies
- A pinch of asafoetida
Preparation Method
Prepare the Batter
- Wash the urad dal and soak for 6 hours.
- Grind into a smooth, fluffy batter with the poha and salt.
- Mix in the soaked idli rava, cover and ferment 8–10 hours.
Prepare the Masala Idli
- Add the chopped vegetables, coconut and spices to the batter.
- Grease the moulds and pour in the batter.
- Steam for 10–12 minutes and serve hot with chutney.
Recipe Tips
- Use fresh coconut for authentic flavour.
- Ferment the batter well for soft, fluffy idlis.
- Do not overmix after fermentation.
