Preparation Method

Prepare the Greens

  1. Clean the amaranth leaves thoroughly and wash them well.
  2. Finely chop the leaves and keep them aside.
  3. Finely chop the onions and green chilies.
  4. Peel the garlic and crush it lightly.

Prepare the Palya

  1. Heat oil in a wide pan over medium heat.
  2. Add mustard seeds and cumin seeds and allow them to splutter.
  3. Add the chopped onions, crushed garlic, curry leaves, and green chilies.
  4. Sauté well until the raw smell disappears and the onions become soft.
  5. Add turmeric powder and red chili powder. Mix well.
  6. Add the chopped amaranth leaves and mix thoroughly.
  7. Add salt to taste and mix again.
  8. Cover the pan with a lid and cook on low heat for 10–15 minutes.
  9. The greens will release their natural moisture. Continue cooking until the water completely evaporates and the oil begins to separate.
  10. Mix once more and turn off the heat.
  11. Serve hot.
