For the Kesari Bath
- 1 cup Bombay rava (fine semolina)
- 2 cups milk
- 1 cup water
- ¾ cup sugar
- ¼ cup ghee
- 10–12 cashew nuts
- 2 tablespoons raisins
- ¼ teaspoon cardamom powder
- A few saffron strands
- 2 tablespoons warm milk (for soaking the saffron)
Preparation Method
Prepare the Milk Mixture
- Heat the milk and water together in a saucepan until it begins to boil.
- Soak the saffron strands in 2 tablespoons of warm milk and keep aside.
Prepare the Kesari Bath
- Heat a pan and add a little ghee.
- Fry the cashew nuts until golden brown, then add the raisins and fry until they puff up. Remove and keep aside.
- In the same pan, roast the Bombay rava on a low flame until it becomes aromatic.
- Slowly pour the hot milk and water mixture into the roasted rava while stirring continuously to prevent lumps.
- Add the soaked saffron along with the milk and mix well.
- Cook for about 2–3 minutes until the rava absorbs most of the liquid.
- Add the sugar and stir continuously until it dissolves.
- When the mixture begins to thicken, add the cardamom powder and the remaining ghee.
- Mix well until the Kesari Bath leaves the sides of the pan.
- Garnish with the fried cashews and raisins, and serve hot.
